It's been a while since I posted anything on macarons, mostly because I'm afraid they won't turn out with feet or the shell will crack. Without beautiful feet and a nice glossy shell, it just isn't a macaron anymore. It becomes like a crazy-sweet-cookie.</div>

So with my lack of motivation, my cousin convinced me to bake a batch of macarons-an old recipe. The first ever macaron attempt I made. The good thing about this recipe is that it doesn't require any rest time for the shells. Just pipe 'em and throw them in the oven, well, something like that. We were under pressure with only an hour to bake for fun before prepping all the main dishes for a farewell dinner.<br />

Lately sweet potatoes have been sprouting like crazy in my grandpa's backyard, and my mum has been stocking up on sweet potatoes, so now we have a whole box full of them! Last night I had some unexplained urge to attempt making something sweet out of these sweet sweet spuds.</div>

I'm not sure whether this is true or if it's just some myth, but are carrots really a chinese ginseng? You used to hear people say carrots are good for your eyes, well that was kind of true to some extent. Although a balanced diet is the way to go. So today we made a health-ish carrot cake recipe.</div>

Note: We mixed the dry ingredients together and the wet ingredients together and then incorporated the two mixtures. Instead of baking it in the loaf kind of tin pan for 50 minutes, we used 15 muffin tin molds and baked it for about 25 minutes.<br />

1 tsp vanilla essence</div>

<li>Combine butter and brown sugar in a bowl using a whisk.</li>
<li>Whisk in eggs one at a time until the mixture has a nice consistency. Then add vanilla essence and mix.</li>
<li>Add in plain flour and baking soda and stir into the mixture.</li>
<li>Add in chocolate chips and combine into the mixture.</li>
<li>Prepare the waffle mold and pour the batter in (I half-filled it) and bake until desired preference (I prefer mine crispier so I cooked it for about two minutes). Serve immediately with ice cream or store it in an air tight container. </li>

Note: You could substitute the 1 cup leftover oatmeal with 1 1/2 of rolled oats. You can also substitute the chocolate chips with dried fruits.</div>

Last week we discovered there had been four tin cans of 1.25 kilograms of Milo sitting in the cupboard at church-untouched. Then we discovered that they expired at the end of April, just last month. Since we didn't want to be wasteful, we took a can (or two) home to check if it was edible. Guess what? Upon opening the Milo can, the powder smelled and looked really Milo-y. So I began my search for a recipe that would use a lot of Milo.</div>

While researching, I stumbled across this recipe which requires lots of Milo and even more if you want. It yields a cupcake that fills the room with the fragrance of Milo upon baking. Moreover, it's like Milo in a cup form as the icing is made from condensed milk and the cupcake itself is full of a Milo-y smooth malt taste.</div>

For the best texture, the cakes should be dark golden brown on top and firm to the touch and after cooling for 1 minute out of the oven. Beat butter until light and fluffy and then beat in icing sugar until combined. So we found a spot to park. Half an hour parking, just what we needed. We walked past this shop on our way to the apple store. Sale! Got a booking last minute. Got the mac fixed up in a flash. Went past this store again on our way to the car in less than half an hour. Then we went to have some lunch. </div>

After all that business, it was a nice way to just chill and go shopping. Then we shared a summer special. It's really nice to get together with a bestie on a nice day. I just felt like I had to give it go. It's an amateur attempt at making three different layers and then combining them and the process of making it was different from how I imagined it. I didn't think the sponge layer would turn out quite so thick when encasing it in the custard. I didn't think the jelly top would be as fragile to handle as it turned out to be. I didn't think that we had ran out of caster sugar so I used raw sugar instead.<br />

<div><u>Berry Yoghurt Cake</u></div><div>Ingredients: </div><div>125ml (1/2 cup) yoghurt</div><div>160g (3/4 cup) raw sugar</div><div>3 eggs</div><div>95g (1/2 cup) ground almond</div><div>140g (1 cup) self raising cake flour</div><div>125ml olive oil</div><div><br />
</div><div>Direction:</div><div><ol><li>Preheat oven to 180 degrees Celsius. Grease a 20cm round pan.</li>
<li>Mix yogurt, sugar and eggs together.</li>
<li>Add almond meal and mix. Then sift in flour and mix.</li>
<li>Pour oil in slowly whilst mixing. </li>
<li>Put mixture into round pan. Bake 40-50 minutes or until skewer comes out clean when inserted.</li>
<li>Cool 15-20 minutes before removing from pan.</li>

Since I baked the chiffon cake last night and left it to cool overnight, someone must have gotten hungry, unmolded it last night and took a chunk out of it. Who's the culprit? Well, this morning I still managed to capture pictures of the remaining cake before it became breakfast for my hungry siblings.<br />

This morning I also happen to drop by my cousin's place with some slices of lemon chiffon cake to share. And they had just finish baking a banana cake which was really very moist and delicious (thank you G ^.^). So I exchanged a slice of chiffon cake for a slice of moist banana cake and joined them for breakfast with a nice cup of hazelnut coffee. A warm and pleasant morning to begin the day with, sweet enough for me.<br />

</div><div style="text-align: left;">Today was my first time baking a friand and my second time eating a friand. The first time I ate a friand and heard about it was my cousin's strawberry friand. It had a slight tang, subtle sweetness, and nice moistness. As we made the almond friand, I noticed the beautiful consistency of the batter. When it was being baked, each individual friand rose with such elegance. Taking a bite of it was every bit as palatable and delectable. Makes about 40 mini cupcake-sized<br />
<br />
Ingredients:<br />
1 1/2 cups (185 grams) icing sugar<br />
1 cup (150 grams) plain flour<br />
5 egg whites, lightly beaten<br />
180 grams butter melted<br />
1 teaspoon vanilla essence<br />
1 packet (approx. 100 grams) almond flakes<br />

Directions:<br />

<ol><li>Preheat the oven to 180 degrees Celsius. Prepare a two 24 mini muffin mold non-stick baking trays.</li>
<li>Sift and combine the icing sugar, plain flour and almond meal together.</li>
<li>Mix the egg white, melted butter and vanilla essence together then add to the dry ingredients mixture and stir until just combined.</li>
<li>Spoon the mix into each mold and fill 3/4 full. Sprinkle almond flakes on top of each. </li>
<li>Bake for approximately 12-15 minutes or until the tops are browning or when a skewer is inserted, it comes out clean. Allow to cool for 5 minutes before removing from the tray. Enjoy (;</li>

Melt-in-Mouth German Cookies<br />
Makes 60<br />
<br />
Ingredients:<br />
125 grams butter, softened<br />
40 grams icing sugar<br />
1 teaspoon vanilla essence (optional)/ or 1 teaspoon of cocoa or matcha powder or Milo (optional)<br />
125 grams potato starch<br />
80 grams cake flour<br />
<br />
Directions:<br />

<ol><li>Preheat the oven to 170 degrees Celsius. Prepare a non-stick baking tray or line a tray with baking paper.</li>
<li>Mix butter with icing sugar in a bowl. Then add vanilla essence or desired flavouring.</li>
<li>Sift potato starch and cake flour into the butter mixture and incorporate it using a spatula until it becomes dough-like.</li>
<li>Divide and roll the dough into 1 inch sized balls (you can leave it in the fridge to harden for 10-15 minutes if too soft to work with). Then press the dough ball gently with a fork.</li>
<li>Bake for about 15 minutes or until the surface of the cookies is slightly browning.</li>

At church, during meal times, everybody takes the food and eats it with delight despite the different cuisines, preferences, quantity or quality-it's a love meal, meaning the food is made with love, shared with love, and eaten with love.<br />

And not just any chocolate. It had to use white chocolate, contain no nuts, and be easy to make so I could make a larger quantity without spending too long in the kitchen. Makes 48<br />

Ingredients:<br />
1 large orange<br />
185 grams butter<br />
3 eggs whisked<br />
1 cup caster sugar<br />
1 1/2 cups self-raising flour<br />
2 tablespoons<br />

Directions:<br />
1. Preheat oven to 180 degrees Celsius and prepare a mini muffin or cupcake tin with 48 molds.<br />
2. Puree orange in food processor(I used a blender and put the eggs inside too).<br />
3. Cream the butter and sugar together until light and fluffy then add the eggs slowly while continuously beating then add the orange puree and mix.<br />
4. Add the flour and poppy seed and fold into the wet mixture.<br />
5. Equally divide mixture between 48 molds.<br />
6. Bake 15 minutes at 180 degrees Celsius, or check by using a skewer to poke the inside of the cupcake and see any mixture is attached to it, if not then the cupcakes are ready. It's been too hot this summer to have a steam boat so we made an assorted sushi platter, crispy spring rolls, Chinese BBQ pork sausages, potato salad, and a soy sauce beef and broccoli stir fry. Unfortunately we only got these pictures before the evening rolled on and guests started arriving. With busy hands we wrapped, mixed, cooked, washed, cut, and positioned ingredients and items on plates. It almost felt like a chef's kitchen as my mom yelled orders up and we followed through immediately.<br />
